1BunchFresh dill or tarragon

Instructions
Preheat oven to 200c fan
Remove the tails with scissors and rinse the sea bass inside and out, dry off with a kitchen towel
Cut three incisions on each side of the fish, not too deep.
Roughly chop the fresh herbs and add a tablespoon or so to the fishes cavity along with a slice or two of lemon.
place a couple of slices of lemon in the centre of a piece of tin foil large enough to wrap the fish, put the fish on top of the lemon, add a knob of butter, sprinkle with salt and pepper and add another slice of lemon plus some more of the chopped herbs.
Repeat for each fish.
Loosely wrap the foil around each sea bass and place them all in a baking dish
Bake in the preheated oven for 25-30 minutes depending on the size
Notes
A simple salad or steamed new potatoes with butter is all that's needed as a side to this as a light meal.
