Simple baked lemon Sea Bass
A very simple light dish for summer evenings
Ingredients
- 4 Whole sea bass Scaled and gutted, preferably wild caught
- 2 Lemons, sliced
- 1 Bunch Fresh dill or tarragon
- 1 Bunch Fresh Coriander
- 4 tbsp Butter
Instructions
- Preheat oven to 200c fan
- Remove the tails with scissors and rinse the sea bass inside and out, dry off with a kitchen towel
- Cut three incisions on each side of the fish, not too deep.
- Roughly chop the fresh herbs and add a tablespoon or so to the fishes cavity along with a slice or two of lemon.
- place a couple of slices of lemon in the centre of a piece of tin foil large enough to wrap the fish, put the fish on top of the lemon, add a knob of butter, sprinkle with salt and pepper and add another slice of lemon plus some more of the chopped herbs.
- Repeat for each fish.
- Loosely wrap the foil around each sea bass and place them all in a baking dish
- Bake in the preheated oven for 25-30 minutes depending on the size
Notes
A simple salad or steamed new potatoes with butter is all that's needed as a side to this as a light meal.
